You had to go there, didn’t you Cheryl?

You guys are not gonna believe this. So I get a comment from Cheryl a bit ago telling me she’s just tagged me for a meme. And I’m like, “Yeah, meme sounds good. I was going to post tonight anyway and was kicking around a few ideas but am not really committed to anything yet. A meme will be perfect.” So I head on over to her place and check out the meme. I see the cute picture of her kids and read the instructions for the meme, which are as follows:

* Go to your Sixth Picture Folder then pick your Sixth Picture.
* Pray that you remember the details.
* Tag 5 others.

All right, sounds easy - straightforward. I mean, I think about the fact that whatever I picture I find will be fairly recent just because this computer is newish and we only recently started putting pictures on it, but I’m thinking I’ll go ahead and just see what it brings up.

So I go in my pictures and start counting to the 6th folder, which I don’t really recognize because it has been labelled “random” for some reason. I open it up and see a row of pictures of Sam vacuuming as I count out the six, bringing me to (and I can see what’s coming up and I’m thinking, no freakin’ way . . .) this:

For those of you who are confused over why I have a picture of burned to a crisp oatmeal, well, please be enlightened by reading here about my horrible slow cooker failure. Oh, what’s that? You enjoyed reading about me burning oatmeal in a slow cooker so much that you want to read more? Well, here you go.

And here’s the part you don’t know, because I never told you: I did try it again. I even added an extra 3/4 of a cup of water. The edges still burned, and I knew before I even got into my kitchen that morning that the same freaking thing had happened.

For the record, Gretchen found another recipe that was almost identical to the one I used that was meant to be cooked for like and hour and half - same amount of liquid and everything. And I’d say, based on that, that perhaps the recipe I followed just had a typo for the amount of time it was supposed to slow cook, except for the fact that it was called OVERNIGHT OATMEAL. I can’t believe I’m getting worked up over this again.

Anyway, here’s what we had for breakfast this morning, which is actually a huge favorite around here, and with Halloween and Thanksgiving coming up, you know ya’ll need more ways to eat pumpkin, right? This is adapted from Eating Expectantly (No! This is not some weird way to announce I’m pregnant. We just like the damn muffins!).

Pumpkin Muffins

1 egg

1 TB butter/margarine

1 C canned, unsweetened pumpkin

2/3 C brown sugar

3/4 C skim milk

2 C flour (the original recipe calls for 2 C all purpose; I used about 1C all purpose and 1C whole wheat)

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp ground ginger

1/2 tsp each of cinnamon and nutmeg

*I also sometimes add a few TBs or so of wheat germ and/or ground flaxseed. No one notices:)

Preheat oven to 400. In a big bowl combine the wet stuff (egg, milk, butter, pumpkin) and the sugar. In another bowl combine the dry stuff (flour, baking powder and soda, salt, and the spices). Fold the wet stuff into the dry stuff. Spray a muffin pan with cooking spray. Pour batter. Bake for 20-25 minutes. Makes 12. Very yummy, especially with cream cheese frosting should you care to go there.
